TOMATO PANCAKES


Roasted salmon with tomato jam glaze

Topped with Jennifer's Jams Original Tomato Jam, these tomato pancakes are perfect for brunch!


INGREDIENTS

  • 2 cups all-purpose flour

  • 1 1/2 cups 100% tomato juice

  • 3/4 cup milk

  • 1 tsp. sugar

  • 1/2 tsp. dried oregano

  • 1/2 tsp. dried basil

  • 1/4 tsp. black pepper

  • 9 oz. fully cooked deli ham cut into strips

  • 9 oz. Gouda cheese, grated

  • Parsley to garnish

  1. Mix flour, tomato juice, milk, sugar, and spices together in a bowl until batter is smooth. Combine ham and Gouda cheese together in a separate bowl.

  2. Heat a lightly oiled griddle over medium-high heat. Drop 1 ladle of batter onto the riddle and cook until bottom is browned. About 5 minutes. Flip and cook until browned on the other side. 3 to 4 minutes.

  3. Transfer pancake to a serving plate, Sprinkle ham and cheese mixture over the pancake. Roll pancakes around the filling.

  4. Top with Jennifer's Jams Original Tomato Jam and garnish with parsley.
