Topped with Jennifer's Jams Original Tomato Jam, these tomato pancakes are perfect for brunch!
2 cups all-purpose flour
1 1/2 cups 100% tomato juice
3/4 cup milk
1 tsp. sugar
1/2 tsp. dried oregano
1/2 tsp. dried basil
1/4 tsp. black pepper
9 oz. fully cooked deli ham cut into strips
9 oz. Gouda cheese, grated
Parsley to garnish
Mix flour, tomato juice, milk, sugar, and spices together in a bowl until batter is smooth. Combine ham and Gouda cheese together in a separate bowl.
Heat a lightly oiled griddle over medium-high heat. Drop 1 ladle of batter onto the riddle and cook until bottom is browned. About 5 minutes. Flip and cook until browned on the other side. 3 to 4 minutes.
Transfer pancake to a serving plate, Sprinkle ham and cheese mixture over the pancake. Roll pancakes around the filling.
Top with Jennifer's Jams Original Tomato Jam and garnish with parsley.
