Jennifer's Original Tomato Jam adds a light sweetness to this rich roasted salmon.
INGREDIENTS
Salmon fillets, preferably wild or farmed organically
Salt and black pepper
Heat oven to 425°
Salt and pepper the salmon fillets
Place the salmon fillets skin-side down on a lightly oiled, foil-lined baking sheet.
Slather the tops of the fillets with Jennifer's Jams Original Tomato Jam and slide them into the top half of your oven.
Roast for about 15 minutes, then serve.
Add veggies sprinkled with olive oil, salt and pepper to the baking sheet for an easy sheet pan dinner.
