GOAT CHEESE CROSTINI WITH ROASTED BLUEBERRIES AND TOMATO JAM


Goat cheese crostini with roasted blueberries and tomato jam

Sweet blueberries compliment tart tomato jam and creamy goat cheese in this easy appetizer.


INGREDIENTS

  • 2 cups fresh blueberries

  • 2 tablespoons fresh lemon juice

  • 1 tablespoon honey

  • 1 cup goat cheese

  • Jennifer's Jams Tomato Ginger Jam

  • Zest of 1 large lemon

  • 1 French baguette thinly sliced and toasted

  1. Preheat oven to 400 degrees F.

  2. In a large bowl mix fresh blueberries, lemon juice and honey.

  3. Pour blueberry mixture onto a baking sheet.

  4. Roast for 7-10 minutes or until blueberries are soft and almost ready to pop.

  5. Let the blueberries cool to room temperature.

  6. Spread the baguette slices with Jennifer's Jams Tomato Ginger Jam.

  7. Top with crumbled goat cheese.

  8. Spoon roasted blueberries on top.

  9. Sprinkle with lemon zest and serve.
