AVOCADO, BACON AND EGG TOAST WITH TOMATO GINGER JAM


Avocado, bacon and egg toast with tomato jam

INGREDIENTS

  • 1 slice French bread, cut thick and toasted

  • Jennifer Jam's Tomato Garlic Jam

  • 2 slices thick-cut bacon, cooked

  • 1 large egg

  • 1/2 avocado, thinly sliced

  • salt and pepper for seasoning

  • fresh chives for topping

  • Heat skillet over medium heat and add oil to the pan. Add the egg to the pan, cooking over easy or as desired. Season with a salt and fresh cracked black pepper.

  • Thinly slice the avocado and sprinkle with salt and pepper.

  • Spread Jennifer Jam's Tomato Garlic Jam on the toast. Top with the avocado slices, bacon and the egg. Top with fresh cut chives.
